Analysis of synergistic effect of antioxidants

   When two or more antioxidants are used together, the antioxidant effect is often greater than the sum of single use. This phenomenon is called antioxidant synergy. This is because different antioxidants can terminate the chain reaction of lipid oxidation at different stages.

     For example, ascorbic acid can be used as regeneration agent of main antioxidant, scavenger of oxygen, metal chelator, and its oxidation browning products also have antioxidant activity. These two synergistic effects have been proved by practice and widely used in oil antioxidant.
